No-Bake Energy Bites

I love these. I love that they do not involve baking. I love how they taste. I love how easy it is to mix and match the ingredients. I've found a number of variations of this recipe online. The most basic seems to be this:

1 cup dry oatmeal
1/2 cup peanut butter
1/2 cup ground flaxseed
1/3 cup honey
1 tsp vanilla extract

Mix all ingredients. Chill in refrigerator for 30 minutes. Roll into balls. Done!

I added 1/2 cup dark chocolate chips. I've seen some recipes call for dried fruit or coconut. I just eyeballed the amounts. Mainly because measuring peanut butter and honey is more trouble than its worth. I used reduced fat peanut butter for my batch and couldn't taste the difference. I just made these tonight and the one....or two....that I sampled were delicious! Perfect mid-morning snack!

Pizza Pinwheels

My first recipe is a very, very simple one.  More of a snack than a meal. My mom taught me these.  I used to make these ALL the time in college.  I hadn't made them in a looong time until this week.  I don't feel like cooking big meals for just myself so I just made a snack.  If you're making these for just yourself, I suggest the half sized rolls of crescent rolls...

First, get rid of the diagonal cut in the crescent rolls to make large rectangles by pressing on the cut lines with your fingers.  Go ahead, smush it together. Four rectangles for a full roll, two for a half. Obviously.

Cover with pepperoni, you can add more than I used, in fact I suggest it. Remember, I haven't made this in a few years.  It needed more pepperoni.  Then cover with mozzarella cheese.  Use more cheese too. Not because it needed it, but because you can't have too much cheese. Ever.


When you're done....roll it up!


   And cut! Lay on a non-stick cookie sheet or non-stick aluminum foil. (The non stick is important here..remember lots of cheese. It sticks!)


Cook according to the instructions on the crescent roll package.  I think it's 375 for 10-12 minutes.  Let set for a minute before trying to take off of the pan.

Finally, and most importantly, because no meal is complete without some sort of dip, gravy, or sauce....dip in pizza sauce. Enjoy!
